Utah Juniper berries have a thin flesh that is sweet but strongly flavored of resin with a mealy texture; they may be eaten raw, cooked, or dried and ground into a flour. They can be used as a flavoring in stews and on meats. Add juniper berries to stews, meats, marinades, or rubs. You can also grind them into a spice blend or dry rub. Juniper berries are a traditional ingredient in German sauerkraut and pickle well on their own. Juniper berries can be left in water to ferment and create a drink called Smerka. Juniper berries contain polyphenolic compounds known as bioflavonoids, or flavonoids. Juniper berries have 87 distinct antioxidant compounds, according to one chemical assessment. Fun fact: Utah Junipers are hermaphrodites while the Colorado variety are male and female.
